Cabin Wafflets (Omelet Waffle Mashup)
Hiking at altitude requires all the food groups to keep you satiated and Wafflets are one of our favorite morning traditions. Make a few more than you need and after you get back from your hike, you'll have a snack!
Ingredients
- 1/4 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 4 large eggs
- 2 tbsp. olive oil
- 1 c. chopped cooked potatoes
- 1/2 c. shredded Cheddar cheese (about 4 ounces)
- 1/8 c. red peppers peppers
- 2 green onions, finely chopped
- 1 strip of bacon per wafflet
- Fresh Thyme to garnish
Directions
- Preheat waffle maker. In a large bowl, whisk together flour, baking powder, and salt. Add eggs and oil; whisk to combine. Fold in potatoes, Chedder, peppers, bacon, and green onions.
- Spray waffle maker with nonstick cooking spray and add 1/4 cup batter. Cook 5 minutes or until deep golden brown. You can keep the Wafflet's warm at 225 degrees in the oven . Repeat with remaining batter.
- Top with fresh Irish butter and Maple Syrup. Add a small fresh sprig of Thyme to garnish.
