Cabin Wafflets (Omelet Waffle Mashup) 

Hiking at altitude requires all the food groups to keep you satiated and Wafflets are one of our favorite morning traditions. Make a few more than you need and after you get back from your hike, you'll have a snack! 

Ingredients

  • 1/4 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 4 large eggs
  • 2 tbsp. olive oil
  • 1 c. chopped cooked potatoes
  • 1/2 c. shredded Cheddar cheese (about 4 ounces)
  • 1/8 c. red peppers peppers
  • 2 green onions, finely chopped
  • 1 strip of bacon per wafflet
  • Fresh Thyme to garnish

Directions

  1. Preheat waffle maker. In a large bowl, whisk together flour, baking powder, and salt. Add eggs and oil; whisk to combine. Fold in potatoes, Chedder, peppers, bacon, and green onions.
  2. Spray waffle maker with nonstick cooking spray and add 1/4 cup batter. Cook 5 minutes or until deep golden brown. You can keep the Wafflet's warm at 225 degrees in the oven . Repeat with remaining batter.
  3. Top with fresh Irish butter and Maple Syrup. Add a small fresh sprig of Thyme to garnish.
